& post pictures of vineyards, wines, winemakers or whatever you want”.  Our friend Chris set it up to be user friendly & it is now up & running.

Imagine, the kids are teaching me how to do Facebook.  I am definitely not very good at it, but am REALLY excited about what can be done via this venue.  As an example, if one looks at the photo section, we have been able to post some really cool pictures of vineyards, wine personalities, etc.  Hopefully, this is just the beginning.  Remembering the old saying, ”a picture is worth a 1000 words”?  Hopefully, these pictures will add more dimension for you in understanding wine, especially ‘good” wine.

”Shinsato Pork”

Three of the Executive Chefs from our DK Restaurant group—JJ Reinhart (Sansei Waikiki); Jason Miyasaki (DK Steakhouse) & Keith Endo (VINO) have joined together to buy a whole pig from Shinsato Hog Farm.  Each of come up with their own specials which they will be offering at their respective restaurants during the month of September (please look at the Sansei & DK Steakhouse website for more information/details on their dates & specials).  Shinsato Hog Farms is a 9 acre spread tucked away against the Koolau Mountains, which Glen took over from his wife’s family (Tomei Hog Farms) in 1972.  Today, it is the only USDA certified pork slaughterhouse on Oahu & is located right on their farm itself.

 

On these 3 dates, VINO Chef Keith Endo will be offering the following specials, while supplies last.

 

Crispy Shinsato Pig Torchon

with homemade black mission fig infused mustard, pickled watermelon rind, 24 hour

roasted WOW Farms Roma tomatoes, Dryland Farm micro arugula salad

Shinsato Cassoulet

 housemade garlic fennel sausage, pork shoulder confit, house cured pancetta, “China town”

”Fresh Oysters”  Saturday, Sept 22nd   

It is still oyster season in the Pacific Northwest.  VINO Chef Keith Endo has a really cool connection to get some really fresh, succulent oysters.  This time Chef Keith says he will again change it up a little….but one preparation will still be raw, another, panko crusted & fried, & another baked.  Like many of our other wine & food events, not only will this fun but hopefully one will learn a thing along the way too.  We will announce the specials shortly.  In the meantime, please mark your calendars.

 “Fresh Fish Specials” Thursday, October  11th 

VINO Chef Keith Endo’s goal here (weather & fish availability permitting) is to fish a couple of local fishes, not normally found in a VINO kind of restaurant….& then prepare it with a Mediterranean slant.   Last week, for instance he served crispy Moana (goatfish) with capers, lemon, white wine & olives.  It was great!   So…..here we go again…..another opportunity for VINO to try something out of the box……AND support local inaanother different way.  (this will be in addition to our regular VINO menu, which will still be offered).  As is the case on these kinds of nights, the specials will be on a first come, first serve basis….& as VINO regulars know, they always run out.  Come early!

"Crab Night @ VINO"   Saturday, October 13th    

Because of its incredible popularity, we look to do another.  On this night VINO will be offering some Dungeness crab specials created by VINO Chef Keith Endo.  It seems like he got a really good source for some fresh, succulent crab & wanted to have share it with our VINO guests.  As is the case on these kinds of nights, the specials will be on a first come, first serve basis….& as VINO regulars know, they always run out.  Come early!

Wine Tasting—“2006 Californian Standouts”  Thursday October 18th 6pm

Our dear friend Fritz Hasselbach from Weingut Gunderloch of Germany was just in VINO the other night with his wonderful wife Agnes.  (In case you do NOT know, fritz & Agnes grow & craft our CF Riesling Medium Dry “Euro-Asian” exclusively for us here in Hawaii.)  Anyway to better show him how I proposed to slightly change the wine style, I served them a 2006 Riesling from the Mosel.  After much sniffing, slurping & tasting, Fritz said…Ahhh…this is typical of 2006!!!!!  I asked what does that mean?  He said the characteristics are very much like the wines he has experienced from 2006 in Germany!  Now, keep in mind I did NOT tell him what vintage the wine I had served was.  Wow!!!!  Do any of us know what a 2006 Bordeaux tastes like….or a Californian?  Well, this inspired us to put on this tasting…….an opportunity to taste FOUR fabulous wines from the terrific 2006 vintage…..this time from California.  If tasters come to the 2007 tasting the week prior, this should even add more depth to learning.  Should be quite interesting ……so don’t miss out.  Yes….just another opportunity to learn.

VINO “Vintage Steak” Special

For those who have yet to experience the Vintage Steak….it is really fantastic!  The bottom line is that in two different BLIND tastings, the Vintage New York was the steak we preferred!!!  Because of the rising cost of this steak, the new price of our eight ounce VINO Vintage New York Steak is $15 each, (which we feel is still a great deal….& an opportunity to try this fabulous steak) on the Thursdays listed above.   It is your opportunity to see first hand how good this steak really is!  You will see, this piece of beef is meant to be served with rustic red wines like those served in VINO.  Remember…  (NO other discounts apply & no take out orders).  Limited, so come early!!

 Wine Tasting—“2008 Standout Pinot Noirs”  Thursday, Oct 25th 6pm

In the recent “Wine Advocate” publication, it is even more apparent with the input of writer Antonio Galloni that there is a changing of the guards not only at the magazine, but also pecking order of wines & wineries throughout California in this case.  We think it is a good thing!  In support of three relatively new comers, we put together this tasting.  We chose 2008 to feature because it was a stellar vintage for many in the Central Coast of California.  So, here is an opportunity to taste THREE fabulous examples of the New Age….& 1 from Burgundy as a contrast.  To make things more interesting, we will serve these wines BLIND.  Yes….just another opportunity to learn.

Why do we change the wines by the glass so often? The answer is to try and experience the WORLD of wines.  If we change two wines a week, that means 104 new wines to try each year.  That is the fun part of it all, isn’t it?

 

2011 Castello di Ama “Rosato”  NEW By The Glass

It is hard to find really interesting, food friendly rose.  One of the real stars comes from Tuscany & the highly revered Chianti producer Castello di Ama.  Produced from Sangiovese with a small dollop of Merlot, this is a very tasty, masculine, interesting PINK wines ideal for Mediterranean styled foods like VINO’s.  Because this wine is really hard to come by, we highly recommend you come in to try it while we still have some.

 

 

2010 August Clape “Vin des Amis”  NEW By The Glass

Here is a another “hard to come by” wine…..this one from France’s northern Rhone Valley.   There is NO doubt Clape is one of the true Syrah superstars as his Cornas red wines will clearly demonstrate.  Vin des Amis, means wine of friends……& is a stellar Syrah based red which succinctly showcases the raw meat, olive tapenade, violets, lily green peppercorn rusticity & character stellar Syrahs from this region are known for, but in a much more approachable, provocative manner.  What a wine!!!!!!! Don’t miss out on this gem.
